Boerewors & Shrimp Skewers

Ingredients:

  • 1 lb of Ayoba-Yo Boerewors sausage (either All Beef or Beef and Pork)
  • 1 lb. raw shrimp, peeled and deveined
  • 2 zucchini, cut in 1/2-inch cubes
  • 2 tbsp. extra-virgin olive oil
  • 1 red onion
  • 1 dozen cherry tomatoes
  • Old Bay
  • Wooden skewers, soaked in water for 30 minutes

Preparation

  1. Preheat your BBQ or grill to medium high.
  2. Season shrimp with Old Bay and fresh lemon juice
  3. In a large bowl, combine the shrimp, zucchini pieces, and sausage pieces, and cover them with the olive oil.
  4. Load the skewers up with alternating pieces of Boerewors sausage, shrimp, onion, tomatoes and zucchini until they’re full.
  5. Grill the skewers until the shrimp are well-cooked (6 to 8 minutes), and serve.
