Everything But The Kitchen Sink Egg Salad with Biltong

Kelly (PaceLoveFood) has been a long time lover of Ayoba-Yo Biltong. Kelly loves to eat healthy and uses Biltong & Droewors as in-between-meal snacks, as well as incorporating them creatively into recipes like this "Egg Salad with Biltong". We recommend giving her Instagram a follow.  


  • 1 package of Biltong

  • 2 cups of Spring Mix

  • 3 oz Egg Salad

  • 2 tbsp Chopped Fennel

  • 1 tsp Scallions

  • 1 tsp Cilantro

Egg Salad:


  • 1/2 cup Olive Oil

  • 1/2 cup Apple Cider Vinegar

  • 1/2 cup Dijon Mustard

  • 1 tbsp Honey


  • Perfect Hardboiled Eggs: Fill a medium sized pot with six eggs and add enough cold water for there to be at least 2 inches of water above the eggs. Bring to a boil. After one minute, remove pot from flame and cover for 10 minutes. Remove eggs from hot water and place carefully in ice bath for 5 minutes or until they cool to room temp. Peel eggs and slice.

  • Choose a large bowl and add spring mix.

  • Chop veggies and toss in salad.

  • Scoop egg salad in the center and arrange Biltong on and around.

  • Add scallion and cilantro, then pour dressing over salad. Enjoy
